Inspired by the region's appetite for pork barbeque, Memphis, known as the barbecue cooking capital of the world, has become the natural place for the World Championship Barbeque Cooking Contest. 
 
In 2008, more than 150,000 people attended the "Superbowl of Swine" to see, smell and experience the legend of Memphis barbeque. Memphis style barbeque popularity grows from a unique blending of the greatest barbecue traditions. 
 
Traditionally, Memphis Style ribs are smoked "dry", meaning that only a dry rub is applied before slow smoking. You'll find dry rub seasonings are neither too sweet or too hot. Memphis dry ribs are smoked much the way other barbecue pork ribs are prepared. This allows the meat's delicious smoked taste to emerge without being covered up by a sauce.
 
If present, sauces are served "on the side". Sauces can contain tomato, vinegar or mustard. As an option, sauce may be added or not by the lucky person with a full plate of ribs. In Memphis, rib quality and meat flavor are considered more important than any sauce or seasoning. 
 
This old tradition dates back to barbeque's early days when a barbecue shack was a shack.
